A few years ago when my family was on a trip to Sonoma, California, Adam and I went on a jog to find a breakfast place. We came across the Sunflower caffé, a quaint little place for breakfast, lunch, wine and cocktails. We loved it so much we ate there every day that we were in Sonoma.
I tried the Indulgent parfait and nothing else. It was so yummy, consisting of a ricotta, honey and and banana purée base topped with nuts, fruit and granola. It is so simple yet so unique and tastes so good!
I have made it at home a few times. Not quite as good as the original, but still really yummy! Unfortunately they don’t have this on the menu at the Sunflower caffé any more so even if I flew to Sonoma I would still have to make it myself.
This parfait is great to have for breakfast or a sweet treat after lunch! It is a healthy and delicious snack. The banana adds potassium, nuts and ricotta add protein, berries bring antioxidants and I used an extra protein granola for added nutrition.
Indulgent Parfait
Ingredients
- 1/2 cup ricotta cheese
- 1/2 ripe banana
- 1 Tbsp honey
- 1/4 cup granola
- 2 Tbsp slivered almonds (or other nuts of your choice)
- 1/4 cup berries
Instructions
- Add the ricotta cheese, honey and banana to a blender and blend until well combined and banana is puréed
- Top with granola, nuts and berries and enjoy!
