Rainbow Peace Fruit Salad

After the events of last weekend I think this world needs more peace and love to spread around. I made this recipe thinking of the victims of the Orlando massacre and named it the Rainbow Peace Fruit Salad, because I wanted it to reflect the LGBT community and I want it to bring people together to spread love and peace, not hate!

I used a lot of fresh fruit in this salad and tried to use one fruit from each color group. I used strawberries for red, blueberries for blue and even kiwis for green!

You can use any food coloring you want, or you could even use the lemon flavored pudding mixture to give the pudding a yellow tint  without having to use the food coloring. I wouldn’t suggest using chocolate pudding because that is not easily dyed.

This salad is a refreshing summer treat that isn’t too heavy so you can still feel good in your swimsuit! To make the salad lighter use sugar free pudding mix, lite cool whip and sugar free cookies!

Serves:8

Ingredients

  • 1 cup buttermilk
  • 1 package (5.1 oz) instant pudding (Try to go for a flavor that would be easy to dye. I used white chocolate! Use sugar free to cut back on the sugar content)
  • Food coloring of your choice (I chose purple!)
  • 1 package (8 oz) cool whip
  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 3 kiwis, peeled and sliced
  • 1 can (11 oz) mandarin oranges
  • 1 can (8 oz) pinneaple chunks
  • 8 Chips Ahoy! Candy Blast cookies, broken

Instructions

  1. Whisk together buttermilk and Jello pudding mix
  2. Add food coloring until your mixture becomes just slightly darker than what you want in the end product
  3. Fold in cool whip until the color is completely mixed in
  4. Fold in all fruit and broken cookies 
  5. Enjoy right away or refrigerate until ready!
