It’s beginning to look a lot like…

Well today is my 1 year wedding anniversary! We bought ourselves an 8” round Publix cake to celebrate! We ate the top layer of our cake last year, because we didn’t want thawed out cake this year.

We decided to eat in for our anniversary meal. We are making pesto and provolone stuffed chicken breasts, Italian asparagus and alfredo pasta. I added the recipe below. It’s an easy meal!

Pesto & provolone stuffed chicken breasts

  • Servings: 2

  • 2 chicken breasts, butterflied
  • ½ cup Italian bread crumbs
  • 2 TBS pesto
  • 3 slices provolone cheese (or mozzarella works well too!)
  • Alfredo sauce (we love Bertoli mushroom)
  • Toothpicks
  • 1 bundle asparagus
  • 2 servings Penne pasta

Preheat oven to 400 degrees. Coat the outside of the chicken with bread crumbs. Spread Pesto on the inside and layer with cheese (add more slices if you love cheese!). Roll the chicken up & place into greased baking sheet with a toothpick to keep from breaking apart. Top with Alfredo sauce and bake for about 35-40 minutes until the chicken is completely cooked through.

For the asparagus: toss in about 1 TBS of olive oil and Italian seasoning. Bake at 350 for about 15-20 minutes.

For the pasta just cook to your liking and top with Alfredo sauce.

Add some champagne (We had Cook’s Spumante… Adam’s first Champagne that he has liked!) and it turns into a fancy anniversary dinner!

We have also been busy decorating our home for Christmas. My mom told me she used to put up her tree on Christmas Eve!! That is not enough time to enjoy the beautiful sights & smells of the tree. Target had a great sale on holiday décor ($50 off if you bought $100 worth of eligible merchandise) so I took advantage of that!

And of course we made our Christmas cards with Zoey as the star of the show! We captured a great shot of her with the wreath from our front door… and a lot of treats! We used CVS to pick out the card. It printed on the same day!!!
